Sweet and Sour Pork Ribs

Ingredients for Sweet and Sour Pork Ribs:
Pork ribs


Scallion segments


Ginger slices


Ketchup


White vinegar


Salt


White sugar


Cooking wine


Dark soy sauce



Preparation Steps for Sweet and Sour Pork Ribs:


Step 1: Marinate the ribs first. Add scallions, ginger slices, and organic soy sauce to the ribs. Mix well and let it marinate for 15 minutes to absorb the flavors.


Step 2: After marinating, boil a pot of water. Once boiling, add the marinated ribs to blanch, removing blood and any meaty odor. Cover the pot and cook thoroughly. Then, remove and drain the ribs, ready for frying.


Step 3: Pour olive oil into a pan, add the ribs, and pan-fry over low heat. Use minimal oil and fry until both sides turn golden brown.


Step 4: Add ginger slices and scallion segments, stir-frying briefly to release the ribs’ unique aroma. Avoid overcooking to maintain tenderness.


Step 5: Add cooking wine and ketchup, stirring to combine. Then pour in mineral water until it nearly covers the ribs.


Step 6: Bring to a boil over high heat. Once boiling, add white vinegar, dark soy sauce (for color), white sugar, and salt to season. Reduce to low heat and simmer slowly until the sauce thickens naturally.


Step 7: While reducing the sauce, stir continuously to prevent sticking. The ribs’ color depends on this step. After a few stirs, the ribs are ready to be plated.


Step 8: The ribs are coated with rich oils, offering a perfect balance of tender and firm texture—effortless to enjoy without sticking to teeth.


Step 9: Irresistibly sweet without being cloying, akin to a love that retains a little space between partners.
