Mexican Bread Recipe

【Reference Quantity】: 6 pieces. Adjust water amount as needed.


Ingredients for Mexican Bread:


Part A:


– Bread flour: 500g


– Salt: 2g


– Fine sugar: 90g


– Yeast: 4g


– Butter: 60g


– Egg wash: 80g


– Water: 160-200g



Part B:


– Egg wash: 24g


– Cake flour: 22g


– Powdered sugar: 12g


– Butter: 30g


– Piping bag: 1



Instructions for Mexican Bread:


Step 1: Place all ingredients from Part A, except butter, into a mixer. Knead until combined, then add butter.


Step 2: Cover with plastic wrap and let rise for about 45 minutes. Meanwhile, prepare Part B (Mexican bread paste).


Step 3: Mix powdered sugar and softened butter until pale.


Step 4: Add egg wash and stir until smooth.


Step 5: Finally, add cake flour and mix well.


Step 6: Transfer the mixture into a piping bag and set aside.


Step 7: After rising, deflate the dough and divide into 6 equal portions. Cover with plastic wrap for second fermentation until doubled in size.


Step 8: Pipe the paste in a spiral pattern onto the dough. Bake in a preheated oven at 190°C (top and bottom heat) for 15-18 minutes.


Step 9: Remove from oven.
