Ingredients for Mexican Braided Bread:
– Bread flour: 250g
– Sugar: 40g
– Salt: 3g
– Yeast: 5g
– Egg: 1
– Milk: 170ml
– Coconut oil: 15g
Ingredients for Mexican Topping:
– Egg: 1
– Butter: 50g
– Powdered sugar: 50g
– Cake flour: 50g
– Cocoa powder: 6g
Instructions for Mexican Braided Bread:
1. Let the dough ferment until it doubles in size.
2. Prepare the Mexican topping while the dough is resting.
3. Press the fermented dough to release air.
4. Divide it into 9 equal portions.
5. Shape into rounds and let rest for 15 minutes.
6. Form into olive shapes.
7. Roll into long strips.
8. Braid into three-strand plaits.
9. First attempt at braiding may not be perfect.
10. Place in molds.
11. Allow for second fermentation.
12. Brush surface with egg wash and sprinkle hazelnut pieces.
13. Pipe Mexican topping over the surface.
14. Preheat oven and bake at 175°C (lower rack) for 20 minutes.
15. Remove and let cool.
