Healthy Weight Loss Friendly Burrito Recipe

Craving burritos while on a weight loss journey? Try this modified healthy version!


INGREDIENTS:


• 1 tomato


• 1/2 red bell pepper & 1/2 green bell pepper


• 10g cilantro


• 10ml lime juice


• 2g salt


• 2g black pepper


• 2 corn tortillas


• 1 boiled egg


• 50g romaine lettuce


• 10g Greek non-fat yogurt


• 300g chicken breast



INSTRUCTIONS:


Step 1: Prepare ingredients


– Slice and marinate chicken breast with black pepper and soy sauce for 30 minutes, then pan-fry until cooked


– Dice remaining vegetables and marinate with salt and lime juice


– Keep Greek yogurt ready as dressing alternative



Step 2: Select tortillas


Spinach tortillas were chosen for healthier option, though whole wheat or scallion flavors work well



Step 3: Heat tortillas


Lightly toast tortillas in non-stick pan without oil until slightly puffed, about 20 seconds per side



Step 4: Assemble burritos


Layer lettuce, chicken, vegetable-egg mixture and yogurt on tortillas. Fold sides inward and secure with toothpicks
