Glutinous Rice Cake Recipe

Ingredients for Glutinous Rice Cake:
– 135g glutinous rice flour


– 22g corn oil


– 90g milk


– 6 eggs


– 30g sugar


– A few drops of white vinegar



Preparation Steps for Glutinous Rice Cake:


1. Mix milk and corn oil, stir until emulsified.


2. Add glutinous rice flour and mix until smooth.


3. Incorporate egg yolks and stir until the mixture reaches a silky consistency.


4. Add a few drops of white vinegar and sugar to the egg whites. Whip until soft peaks form. (Note: This is a reduced-sugar version; further reduction is not recommended. Beginners should add sugar in three batches, though a single addition is a simplified alternative.)


5. Gently fold one-third of the whipped egg whites into the yolk mixture using a folding motion (avoid stirring).


6. Transfer the combined mixture back into the remaining egg whites and fold until uniformly blended.


7. Pour the batter into a mold and bake at 170°C for 30 minutes.
