Ingredients for Flaxseed French Rolls:
– Water: 150g
– Olive oil: 15g
– Yeast powder: 3g
– Powdered sugar: 10g
– High-gluten flour: 250g
– Sea salt: 2g
– Black sesame seeds: 10g
– Flaxseeds: 10g
– Anchor unsalted animal butter: 18g
Preparation Steps for Flaxseed French Rolls:
1. In order, add water, olive oil, sugar, yeast powder, high-gluten flour, and sea salt to the mixing bowl. Use a stand mixer on low speed for 3 minutes to form a dough, then mix on medium speed for 5 minutes until a rough film develops. Add black sesame seeds and flaxseeds, and mix on low speed for 2 minutes. Ferment at room temperature (around 25°C) for 1 hour. Then, refrigerate for low-temperature fermentation overnight (approximately 10 hours).
2. Remove from refrigeration and let rest at room temperature for 1 hour. Gently punch to degas.
3. Divide into 9 small dough balls, each weighing about 50g. Ferment at 35°C for 1 hour.
4. Dust with flour, make a slit on the surface, and place 2g of butter in the slit. Preheat the oven to 200°C.
5. Bake at 200°C (both upper and lower heat) for 16 minutes.
6. The room fills with the rich aroma of butter and a subtle wheat fragrance. These rolls are so delicious that they can be finished in just a few bites!
