Stir-fried Bitter Melon Recipe

Ingredients:
– 10 small mountain bitter melons


– 0.5 block firm tofu


– 2 smoked sausages


– 1/4 onion


– Shredded carrot (as needed)


– 1.5 tbsp soy sauce


– 1 tbsp mirin


– Salt (to taste)


– 1 tbsp rice wine


– Bonito flakes (as needed)



Instructions:


1. Preparation: Remove seeds and white pith from bitter melons, slice thinly. Cut sausages and tofu into slices. Thinly slice onion and shred carrot.


2. Sausages may substitute lunch meat or pork slices.


3. Blanch bitter melon in salted boiling water for 20 seconds, then drain.


4. Heat oil in pan, sauté onion and sausage until fragrant. Remove from pan.


5. Using residual oil, pan-fry tofu until golden brown.


6. Combine bitter melon, sautéed ingredients, and carrot in pan. Add mirin, soy sauce, and water. Stir-fry.


7. Drizzle rice wine, stir-fry until cooked. Garnish with bonito flakes before serving.
